As the fall season begins to come upon the town of Glassboro, Bonesaw Brewing attends to many of the local residents and students of Rowan University for a time of drinking and relaxation. Serving hundreds of people from different walks of life, the local residents of Glassboro and the students of Rowan University come to experience a time of social interaction through the beers and fellowship Bonesaw offers.
Owners Dave Doe and Rich DiVerniero have a background in homemade brewing. Doe, who has a background in business and chemistry, decided to make the duo’s passion into a reality. Purchasing the land in 2015 and opening its doors in 2018, Bonesaw became the first-ever brewing establishment in New Jersey built from the ground up.
“We love bringing grain to glass and serving the local community. We are a family-owned and operated brewery that pretty much does a little bit of everything. From sourcing grain and hops to manufacturing various brews that are served in our beautiful taprooms to supplying liquor stores, restaurants, and bars throughout the state to even hosting private parties and events. Bonesaw seeks to provide an experience that makes you come back or seek our products at your local store,” said Doe.
The Glassboro location is the larger facility where the products are manufactured for the taproom and distribution to liquor stores and restaurants. The second location is in the Deptford Mall which opened back in 2023 and is referred to as the “Pilot House,” where new brews are tested. Bonesaw serves different styles of beer from India Pale Ale, Lagers, Stouts, Porters, Sours, and many more. Bonesaw also serves beverages that are non-alcoholic like non-alcoholic beer, specialty craft sodas, and cold brew coffee. Light snacks are also served from chips to a charcuterie box.
AJ Stoll who is the production manager and known as the “Brewmaster” runs the making of the beer. He also writes the recipes for the beers. He has a 20-year history of professional brewing.
“We wanted to create a place where people want to come and hang out. It is really welcoming. From college kids, grandparents, and families who want to socialize. Our emphasis is on craft beer. We have 20-25 different beers and for those who don’t like beer, there are other options,” said Stoll.
Bonesaw is open seven days a week. It also holds events such as trivia nights, live music, and comedy nights. Every weekend from Friday to Sunday there are food vendors on site. On Oct. 12 there will be Bonetober Fest which is Bonesaw’s version of Oktoberfest. There will be giveaways, live music, and more that the event will bring.
Bonesaw is an establishment that is also really convenient for Rowan students.
Sam Scalio, a geography-city planning major who is a regular attendee, said “I like to go to Bonesaw regularly. It’s a nice calm place to go to relax and drink a bit, as well they have really good high-quality beer.”
